Special Issue Information

Dear Colleagues,

We welcome the submission of work exploring antioxidant peptides derived from both animal and plant species. Antioxidant peptides have recently shown tremendous potential for application as functional ingredients and nutraceuticals to enhance health and reduce the risk of disease. Peptides can be generated either following gastrointestinal digestion or be naturally present in fermented foods; moreover, they can be designed in silico using the many sequences stored in the databases. The Molecular Weight ranges between 500 and 3000 Da and they are mainly composed by hydrophobic as well as negatively charged amino acids that may account for antioxidant activity. Many healthy properties can be due to antioxidant peptides: although pathological conditions such as atherosclerosis, cancer-, and aging-related diseases have diverse etiologies, they share many underlying pathological mechanisms including abnormalities in inflammatory responses and oxidative stress, which are closely related to each other. Consequently, the characterization of new peptides with antioxidant activity as well as the study of their mechanism of action are interesting topics that this Special Issue aims to address. In particular, studies concerning the relationships between antioxidant activity and both primary and secondary structure are strongly welcome.
